The healthy avocado and chicken salad is super easy to make and your family will love it. As a keto chicken salad, it is also perfect to enjoy as part of a low-carb diet.

Using leftover grilled chicken slices makes this an awesome frugal family meal. This salad is a great lunch option. And, add some delicious homemade rosemary focaccia bread or low carb coconut flour bread and your family will have a feast for dinner.
Avocado Chicken Salad Ingredients
The ingredients listed below is enough to prepare the salad for a family of 4. I vary each ingredient portions per plate according to preference – Check out the top tip below for more detail.
- 4 Grilled chicken breasts, cut into slices
- 1 Cup Cherry tomatoes, halved
- 4 Cups Greens of choice
- I like to use a combination of baby spinach, rocket and butter lettuce
- 1 cup Berries
- Our favorites include raspberries, blueberries and blackberries
- 6 Ripe figs, peeled and halved
- Half a cucumber, sliced
- 1 to 2 Avocadoes, sliced
- Half a cup of Cheese of your choice
- Feta cheese
- We sometimes add grilled halloumi to the avocado chicken salad for extra flavor

Avocado Chicken Salad Preparation
Preparing the avocado chicken salad is as easy as combining all the ingredients, starting with the greens at the bottom. And, ending with the cheese on the top.
Top Tip Preparation
I don`t measure out the amount of each ingredient. Knowing my family member`s preferences, I make the salad in each one`s plate directly.
By doing this I can decide how much of each ingredient to add to each plate. For example, my son loves tomatoes, so his plate will get an extra few. Whilst avo is my daughters favorite, I will add more for her.
By preparing the salad per plate, you can make sure that no salad is wasted and everyone has a salad made just for them! Empty plates guaranteed!
Frugal Meal Planning
I always plan a meal with chicken and vegetables whilst making sure there is enough chicken left over to make the avocado chicken salad the next day. Plan to have at least one chicken breast left over per person to create a nutritious salad.
And, the bonus is an avocado chicken salad dinner prepared within minutes the next day!
Top Tip Serving
For a beautiful looking salad leave the smallest ingredients to add last. Sprinkling the cheese on top make the salad look great!
Avocado Chicken Salad Dressing Recipe
We enjoy the avocado and chicken salad with a drizzle of olive oil and balsamic vinegar. Sometimes we like to indulge in a bit of extra flavor though. And, then I add the delicious salad dressing below.
The avocado chicken salad and dressing go together brilliantly and is so quick to make.
Salad Dressing Recipe
You can make the dressing a day in advance for extra flavor. This salad dressing recipe is delicious with any green salad.
Mix together well
- 3 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2 teaspoons red wine vinegar
- 1 teaspoon red pesto
- lemon juice from half a lemon
- salt and pepper to taste
- 1/2 teaspoon of sugar, optional
Top Tips Salad Dressing
- Mix the dressing again before use.
- Excess dressing can be stored and re-used.
- If you find the vinegar taste too strong, just add an extra tablespoon of olive oil.
Drizzle over your salad and enjoy!
